Happy New Year Praying Moms!

As you begin your adventure into a new year, I pray that you will contemplate the graciousness of God our Father.  I heard a song today that I could really relate to; perhaps you can too.  I will summarize it for you here: "Life is not about what we have done or where we've been, but about what's been done for us.  Life is more than the choices we've made, the sum of our mistakes, or the problems we create.  We have been remade."  Amen!  Thank you Lord Jesus.

As you renew your relationship with God this year, I pray you will remember that He loves you, He died for you and He wants to spend time with you.  May you make spending time with Him each day part of your new year's resolution.  Think small.  God would love to spend any amount of time with you at all.  Although, if you are like me, you may find that when you do spend time with God, it's hard to stop!

Final thoughts:

You can't earn what's already been given to you.  Don't try to work your way into favor with God.  He's already nuts about you.

Happy Thanksgiving!!!

In celebration of Thanksgiving, here is one of my favorite fall recipes.  Enjoy!

Apples with Sweet Potatoes



6 medium sweet potatoes

2 medium apples, Fuji

½ cup butter

½ cup maple syrup

4 tablespoons brown sugar

½ teaspoon ground nutmeg

1-9”x13” baking pan
Boil potatoes for 20 minutes or until done.  Cool and peel.  Slice ½” thick rings and arrange a layer of potatoes in a greased baking pan.  Peel, core and slice apples ½” thick.  Place a layer of apples over the potatoes.  Continue layering until the apples and potatoes are all used up.  Melt butter and add syrup.  Mix well.  Pour over the apple and potatoes layers.  Sprinkle with brown sugar and nutmeg.  Bake at 350 for 30 minutes.

Makes 1 entree, 6 servings.

Can be made a day or two ahead.  Place in refrigerator and bake before serving.

Mocha Chocolate Chip Banana Bread

  • 1 cup margarine

  • 1 1/4 cups white sugar

  • 1 egg

  • 3 ripe bananas

  • 1 tablespoon instant coffee granules, dissolved in

  • 1 tablespoon water

  • 1 teaspoon vanilla extract

  • 2 1/4 cups all-purpose flour

  • 1/4 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 cup semisweet chocolate chips

  • Directions

    1. Preheat oven to 350 degrees F (175 degrees C).
    2. Blend butter or margarine, sugar, egg, banana, dissolved coffee, and vanilla in food processor for 2 minutes. Add flour, salt, baking powder, and soda, and blend just until flour disappears. Add chocolate chips and mix in with wooden spoon. Spoon mixture into a greased bread pan.
    3. Bake for 45 minutes to one hour. Cool on a wire rack.
